What are Essential Fatty Acids?
There are two different types of EFAs found in food. The first type is called alpha-linolenic acid (ALA) and is an omega-3 type of fatty acid. This type of EFA is found in fatty fish, nuts, seeds, certain types of sea vegetables and algae.
The second type of EFA is called linoleic acid (LA) and is an omega-6 type of fatty acid. Omega-6 is found in meats, and oils.
It is recommended we consume equal parts of omega-6 to omega-3 fatty acids for optimal health related to EFAs.
Grape Seed Oil is high in omega-6 fatty acids. Find a balance with Whole Flax Seeds or Flax Seed Oil which is high in omega-3 fatty acids.
What are polyphenols, resveratrol, and proanthocyanidins?
Polyphenols add astringency and bite to foods. You'll notice it in tea that's brewed too strong (once called tannins) and in the "greenish" flavour of extra-virgin olive oil or the back palate of red wine and the strong taste in grape seeds. Anything that makes your mouth pucker generally contains polyphenols.
Polyphenolis a generic term for the several thousand plant-based molecules that have antioxidant properties. This large class of chemical compounds found in plants, are characterized by the presence of more than one phenol unit or building block per molecule. A phenol unit consists of a six-membered aromatic hydrocarbon ring, bonded directly to a hydroxyl group (-OH).
The simplest of the class is phenol (C6H5OH) which has long been used as an antiseptic. See diagram.

Poly means many, which refers to the large number of groupings of the basic phenol rings. There are over 4,000 polyphenol compounds. Many are powerful antioxidants and can neutralize free radicals, reduce inflammation and slow the growth of tumors.
Below is the chemical structure of resveratrol, a polyphenol which is found in the grapevines, seeds, and roots, but the highest concentration is found in grape skins.
Proanthocyanidins (PAs), found in grape seeds and grape skins, are very powerful antioxidants that remove harmful free oxygen radicals from cells. Studies indicate that antioxidant power of proanthocyanidins is 20 times higher than that of vitamin C and 50 times higher than vitamin E.
The importance of proanthocyanidins should not be underestimated. Research suggests that these compounds are beneficial in many areas of health. Proanthocyanidins supplements have become popular in the form of oligomeric proanthocyanidin complexes (OPCs), and grape seed extracts.
